Citrus Yogurt Cake


My potted Calamondin (Citrus ×microcarpa) is fruiting beautifully this year.

Harvested 4 of them and made an yogurt cake.

The original recipe called for oranges, but since Calamondin has fragrance just like tangerines, I figured they can be substituted.

This was the easiest cake to make, ready to eat in less than an hour.  Because Calamondin is not as sweet as oranges, I made a syrup with the juice and soaked the sponge with it for added sweetness.



The result was delicious!
